Twaiwan oolong teas: Dong Ding Oolong ,Ali Shan High Mountain
Oolong
The island of Taiwan was once known as Formosa, which explains why the
teas produced there are also referred to as Formosa oolong tea,or Formosa
wu long tea.
The original oolong tea plants came from China, especially Fujian province, due
to limited cross-cultivation, oolong tea plants in Taiwan are very pure
with only seven or eight varieties.
Nowaday Taiwan oolong tea is one of the best oolong teas in the world
thanks to a mature tea culture and ideal growing conditions. The best
Taiwan oolong tea is grown in the mountains of central Taiwan. Growing
conditions are ideal - high mountains in a subtropical climate create
the cool humid conditions that oolong tea thrives on, such as the Tianli
Oolong, one of the finest and most rare oolong.

Oolong tea is fermented, as a black tea, but the fermentaion is shorter
in duration, yielding a tea that is 15 to 75 percent fermented. Most
Chinese oolongs are only 15 percent fermented, where Formosa oolongs
are often 75 percent fermented. Nowadays, the Taiwanese are making lighter
oolongs that are fermented as little as 15 percent or even less called
Jade oolong and Amber oolong. Becasue of this relatively low fermentation
percentage, these teas are actually pouchong teas.
